Recipe: Dundee Cake

1 cup (2 sticks) unsalted butter, softened
2/3 cup sugar
4 farm fresh eggs, at room temperature

1 teaspoon vanilla extract

2-1/2 cups cake flour
1/2 teaspoon salt
Mystery Ingredient
1 cup dark raisins
1-1/2cups currants
1/2 cup citron, chopped

Mystery ingredient and mystery ingredient for decoration.
Preheat oven to 275 degrees F. Grease and flour two 4-1/2-inch x 9-inch loaf pans. In a large mixing bowl, creme the butter. Add the sugar slowly, mixing well as you do so. Add the eggs, one at a time, beating for 5 minutes after each addition. Stir in mystery ingredient, vanilla and almonds. Sift the flour together with the salt and mystery ingredient into a large mixing bowl. Add the fruit and mix it by hand until it is well floured. Add the fruit to the first mixing bowl and mix thoroughly. Pour the batter into the prepared loaf pans. Decorate the tops of the cakes with the extra mystery ingredient and mystery ingredient to form a pretty pattern. Bake for one hour in the preheated oven. Check for doneness with a toothpick, taking care not to over bake. When the cakes are done, cool them in pans on cooling racks for 10 minutes before removing them from the pans to cool completely. When cool, wrap in aluminum foil and freeze.
Makes 2 medium loaves.
